For 1 serving

  • Whole wheat flour30 g
  • Banana60 g
  • Sunflower oil4 g
  • Baking powder2 g
  • Walnuts8 g
  • Soy milk170 ml

Contains: gluten, nuts, soy,

Method

  1. Preheat the oven to 180 °C (conventional) and put a paper case in a muffin tin.
  2. Peel the banana, ideally very ripe as it's what sweetens the muffin, and mash it to a purée with a fork; roughly chop the walnuts.
  3. Add the sunflower oil and about a fifth of the soya drink to the banana, keeping the rest to drink, and mix.
  4. Add the wholemeal flour, baking powder and walnuts and stir with a fork just until no dry flour is left.
  5. Fill the case almost to the top and bake for about 22 minutes, until risen and golden and a skewer pushed into the centre comes out dry.
  6. Let it cool for a few minutes and serve with a glass of soya drink.
