- Oat flour50 g
- Soy milk80 ml
- Baking powder3 g
- Cinnamon1 pinch
- Almond butter10 g
- Sunflower oil1 teaspoon
Contains: gluten, nuts, soy,
Method
- Peel the banana, put half in a bowl and mash it with a fork to a purée; cut the other half into thin rounds and set aside.
- Add the oat flour, soya drink, baking powder and cinnamon to the purée and stir until the batter is smooth and thick.
- Heat a non-stick frying pan over a medium-low heat, grease it with a little sunflower oil spread with kitchen paper and drop in a spoonful of batter for each pancake, spreading it a little with the back of the spoon.
- Cook for about 2 minutes, until the edges set and the underside is golden, then flip gently and cook for another 2 minutes; without eggs they are fragile, so keep them small.
- Serve the pancakes with the banana rounds and the almond butter.
