Ingredients

For 1 serving

  • Strawberries100 g
  • Kiwi1
  • Orange1
  • Mint2 g
  • Honey1 teaspoon

In season: March – May

Method

  1. Peel the orange to the flesh: slice off the top and bottom, then cut away the peel and white pith following the curve with a sharp knife; working over a bowl, cut between the membranes to free the segments and catch the juice that drips.
  2. Wash the strawberries, pat them dry, hull them and cut them into quarters; peel the kiwi and cut it into cubes of about 1 cm.
  3. Add the strawberries and kiwi to the orange segments and dress with the collected juice, the honey and the mint leaves torn by hand.
  4. Toss gently and leave to stand for 5 minutes so the fruit releases its juices and the flavours blend.
