Ingredients

For 1 serving

  • Almond flour20 g
  • Sugar10 g
  • Egg whites12 g
  • Orange zest2 g
  • Powdered sugar3 g

Contains: nuts, eggs

Method

  1. Preheat a conventional oven to 160 °C and line a baking tray with baking paper.
  2. Wash the orange and grate only the orange part of the zest, avoiding the bitter white pith.
  3. In a bowl mix the almond flour, sugar and orange zest, then add the egg white a little at a time and work with your hands until you have a soft paste that doesn't stick.
  4. Divide the paste in two, shape ovals about 2 cm thick and roll them in the icing sugar to coat well; place them on the tray.
  5. Bake for 15 minutes, until the surface cracks but stays pale: inside they should remain soft, like ricciarelli.
  6. Let them cool completely on the tray before lifting them off.
