Ingredients

For 1 serving

  • Banana40 g
  • Whole wheat flour20 g
  • Eggs12 g
  • Brown sugar5 g
  • Sunflower oil4 g
  • Walnuts5 g
  • Cinnamonto taste
  • Baking soda0.5 g

Contains: gluten, nuts, eggs,

Method

  1. Preheat a conventional oven to 175 °C and line a loaf tin with baking paper. The quantities are for one slice: multiply them by the number of slices in the loaf.
  2. Peel the bananas (ideally very ripe, with speckled skins) and mash them to a purée with a fork in a bowl; roughly chop the walnuts.
  3. Add the eggs, brown sugar and sunflower oil to the bananas and whisk until smooth.
  4. Add the wholemeal flour, bicarbonate of soda and cinnamon and fold with a spatula just until no dry flour is visible, then stir in the walnuts: overmixing makes banana bread rubbery.
  5. Pour into the tin, level and bake for 45–50 minutes, until deep golden and a skewer in the centre comes out dry or with a few moist crumbs.
  6. Let it cool in the tin for 10 minutes, then on a wire rack, and slice it when lukewarm.
