  • Eggs1
  • Reduced-fat milk80 ml
  • All-purpose flour20 g
  • Brown sugar1 teaspoon
  • Vanilla extract1 teaspoon
  • Butter3 g

Method

  1. Turn the oven on to 180 °C (conventional) and butter a small ramekin or ovenproof dish.
  2. Wash the cherries, remove the stalks and stone them with a cherry pitter or a straw; arrange them in the dish in a single layer.
  3. In a bowl, beat the egg with the brown sugar and vanilla extract, then add the plain flour and pour in the milk in a thin stream, whisking until the batter is smooth and lump-free.
  4. Pour the batter over the cherries and bake for 25 minutes, until the clafoutis is puffed, golden on top and set in the centre.
  5. Let it cool for a few minutes before serving: it sinks a little, which is normal.
