Ingredients

For 1 serving

  • Red lentils40 g
  • Unsweetened cocoa powder12 g
  • Orange zest3 g
  • Stevia3 g
  • Vanilla extract2 ml

Method

  1. Rinse the red lentils in a sieve until the water runs clear.
  2. Put them in a small pan with about five times their weight of water, bring to the boil, lower the heat and cook for 15 minutes, stirring now and then, until they break down into a purée and almost all the water is absorbed.
  3. Grate the orange zest, just the coloured part. Blend the lentils while still hot with the cocoa, stevia, vanilla extract and half the zest until velvety: they blend much smoother while hot.
  4. Pour into a small dish, cover with cling film touching the surface and chill for at least 1 hour, until set.
  5. Serve the pudding topped with the remaining orange zest.
