For 1 serving
- Millet25 g
- Almond milk180 ml
- Fresh orange juice50 ml
- Orange zest3 g
- Honey8 g
- Cinnamon1 pinch

In season: November – April
Method
- Rinse the millet in a sieve under running water until the water runs clear: this removes its slightly bitter aftertaste.
- Wash the orange and grate the zest, just the coloured part. In a small pan, bring the almond drink to the boil over medium heat with the orange zest, add the millet, turn the heat to low and cook for 20 minutes, stirring often, until soft and most of the liquid is absorbed.
- Add the orange juice and honey and cook for another 3 minutes, until creamy.
- Blitz briefly with a stick blender to make it velvety.
- Pour into a small bowl, dust with cinnamon and serve warm or cold.
