Ingredients

For 1 serving

  • Lupini beans80 g
  • Lemon0.5
  • Extra virgin olive oil1 teaspoon
  • Rice cakes2
  • Paprika1 pinch

Contains: lupin,

Method

  1. Tip the lupini beans into a sieve, rinse them under cold water to remove the brine and let them drain well. For a smoother cream, slip off the skins by squeezing them between your fingers.
  2. Squeeze the half lemon and strain the juice of pips.
  3. Blend the lupini with the lemon juice, extra virgin olive oil and a tablespoon of cold water for 1–2 minutes, scraping down the sides, until smooth and spreadable; if it's too thick, add another splash of water.
  4. Spread the cream on the rice cakes, finish with a pinch of paprika and eat straight away, before the rice cakes go soft.
