Ingredients

For 1 serving

  • Kiwi1
  • Pineapple100 g
  • Agar agar1.5 g
  • Agave syrup8 g
  • Lime juiceto taste

Method

  1. Peel the kiwis, remove the skin and core of the pineapple and cut everything into roughly 1 cm dice; arrange them in a rectangular mould.
  2. In a small pan whisk the agar agar into a generous half glass of cold water with the agave syrup and the lime juice.
  3. Bring to the boil over medium heat and boil for 2 minutes, stirring, until the agar has completely dissolved.
  4. Pour the hot liquid over the fruit, settling the dice with a fork so they are covered.
  5. Leave to set in the fridge for an hour, until firm, then turn out and cut into a block; unlike gelatine, agar sets fine with raw kiwi and pineapple.
