  • Parsleyto taste
  • Lemon0.5
  • Extra virgin olive oil10 g
  • Bread40 g

In season: November – April

Method

  1. Heat a conventional oven to 200 °C. Fill a bowl with water and a little lemon juice.
  2. Clean the artichokes: snap off the tough outer leaves until you reach the pale ones, cut off the tips and trim and peel the stem; cut into wedges, remove the fuzzy choke and drop them straight into the lemon water so they don't blacken.
  3. Drain and dry the artichokes, put them in a baking tray with half the oil and a pinch of salt and roast for 15 minutes.
  4. Meanwhile chop the parsley and mix it with the breadcrumbs and the grated lemon zest (yellow part only). Pat the hake fillets dry, salt them and press the mixture on top.
  5. Add the hake to the tray next to the artichokes and cook for another 12 minutes, until the crust is golden and the fish flakes with a fork.
  6. Serve with the lemon juice, the remaining oil and the bread.
