- Sugar5 g
- Eggs10 g
- Orange marmalade20 g
Contains: lactose, eggs
Method
- In a bowl mix the rice flour, cornflour and sugar, add the cold butter in small cubes and rub in with your fingertips until sandy; add the egg and knead until the pastry holds together.
- Wrap it in cling film and rest it in the fridge for 15 minutes; meanwhile preheat a conventional oven to 180 °C.
- Set aside a small piece of pastry for decoration and roll the rest between two sheets of baking paper to about 4 mm thick; line a tartlet tin, pressing any cracks together with your fingers.
- Spread the orange marmalade over the base and decorate with small cut-outs from the reserved pastry.
- Bake for 18 minutes, until the edges are golden and the marmalade bubbles.
- Let it cool completely in the tin before turning it out: gluten-free pastry is fragile while hot.
