Ingredients

For 1 serving

  • Black rice40 g
  • Avocado40 g
  • Lime juiceto taste
  • Sesame seeds4 g
  • Saltto taste

Contains: sesame,

Method

  1. Bring a small pan of water to the boil over high heat, salt it and cook the black Venere rice over medium heat for 35 minutes, until tender but still slightly al dente.
  2. Drain it well and spread it on a plate to cool slightly.
  3. Meanwhile open the avocado, scoop out the flesh and mash it with a fork with a few drops of lime juice and a pinch of salt; toast the sesame seeds in a small dry frying pan over medium heat for a minute, until golden, and tip them onto a plate.
  4. With damp hands take a spoonful of rice, flatten it a little in your palm, put a little avocado in the centre and close it up, pressing firmly into a ball: Venere rice isn't very sticky, so you need to squeeze well.
  5. Roll the balls in the sesame, pressing so it sticks.
