Ingredients

For 1 serving

  • Zucchini200 g
  • Extra virgin olive oil1 teaspoon
  • Sesame seeds5 g
  • Saltto taste

Contains: sesame

In season: May – September

Method

  1. Heat the oven to 150 °C (fan) and line a baking tray with baking paper.
  2. Wash and trim the courgettes and slice them into rounds about 2 mm thick, ideally on a mandoline; pat them thoroughly dry with kitchen paper, as moisture would steam rather than dry them.
  3. Toss with the olive oil and salt and lay them on the tray in a single layer without overlapping.
  4. Bake for 30 minutes, until dry and starting to colour; sprinkle with the sesame seeds and bake for 5 more minutes, until golden and crisp.
  5. Let them cool on the tray: they finish crisping within a couple of minutes.
