Ingredients
For 1 serving
- Whole wheat flour50 g
- Baking powder4 g
- Soy milk100 ml
- Apple cider vinegar1 teaspoon
- Sunflower oil2 teaspoons
- Apple1
- Brown sugar1 teaspoon
- Cinnamonto taste
Contains: gluten, soy,
In season: September – February
Method
- In a bowl mix the soy drink with the apple cider vinegar and leave for 5 minutes, until it thickens slightly like buttermilk.
- Meanwhile wash and core the apple and slice it thinly.
- Heat half the oil in a frying pan over medium heat, add the apple, brown sugar and a pinch of cinnamon and cook for 5 minutes, turning now and then, until the slices are soft and caramelised; transfer them to a plate.
- Add the wholemeal flour and baking powder to the buttermilk and stir just enough, leaving a few lumps: this keeps the pancakes fluffy.
- Wipe the pan with kitchen paper, grease it with the remaining oil and cook a small ladle of batter at a time over medium heat, 2 minutes per side, until bubbles appear and the pancakes are golden.
- Serve the pancakes with the caramelised apples.
