  • Whole wheat flour25 g
  • Butter6 g
  • Brown sugar7 g
  • Eggs8 g
  • Apple80 g
  • Lemon juiceto taste
  • Cinnamonto taste

Contains: gluten, lactose, eggs,

In season: September – March

Method

  1. In a bowl mix the wholemeal flour and half the brown sugar, add the cold butter in small cubes and rub in with your fingertips until sandy, then add the egg and knead quickly until the pastry holds together.
  2. Wrap it in cling film and rest it in the fridge for 15 minutes; meanwhile preheat a conventional oven to 180 °C.
  3. Wash the apple, halve it, remove the core and cut it into thin slices about 2 mm thick; toss them in the lemon juice so they don't brown.
  4. Roll out the pastry between two sheets of baking paper to about 4 mm thick, line a tartlet tin and prick the base; arrange the apple slices in a rose, overlapping them from the edge towards the centre.
  5. Sprinkle with the remaining sugar and the cinnamon and bake for 25 minutes, until the edges of the apple are caramelised and the pastry is golden.
  6. Let it cool slightly in the tin before turning it out.
