Ingredients

For 1 serving

  • Nonfat Greek yogurt150 g
  • Skim milk50 ml
  • Agar agar1 g
  • Honey1 teaspoon
  • Vanilla extract1 teaspoon
  • Strawberries80 g

Contains: lactose,

In season: April – June

Method

  1. In a small saucepan stir the cold milk with the agar agar and honey so the powder disperses without lumps.
  2. Bring to the boil over medium heat, stirring, and boil for 1 minute, until the agar agar has fully dissolved: without this minute of boiling it won't set.
  3. Take off the heat and pour the hot milk straight onto the yoghurt with the vanilla extract, whisking until smooth; work quickly as agar agar starts to set at around 40 °C.
  4. Pour into a small mould, let it cool for a few minutes and chill for about 2 hours, until firm.
  5. Wash and hull the strawberries and cut them into wedges; turn the jelly out onto a plate and serve it with the strawberries.
