Ingredients

For 1 serving

  • Eggs2
  • Tamari1 tablespoon
  • Anise seeds1 teaspoon
  • Cinnamon1 pinch

Contains: eggs, soy

Method

  1. Bring a small pan of water to the boil over medium heat, lower the eggs in with a spoon and cook for 7 minutes, until the white is firm and the yolk just creamy in the centre.
  2. Run them straight under cold water until cold, so they stop cooking.
  3. Gently tap the shell all over with the back of a spoon, cracking it without removing it: the marinade will seep into the cracks and create the typical marbling.
  4. In a small pan, heat the tamari with the aniseed, the cinnamon and enough water to cover the eggs over medium heat for 2 minutes, until it just comes to a simmer and smells fragrant.
  5. Put the eggs in a narrow bowl, pour the hot marinade over and leave for at least 15 minutes, turning them now and then; then peel and serve.
