For 1 serving

  • Egg whites4
  • Carrots40 g
  • Peas40 g
  • Spring onions1
  • Soy sauce1 teaspoon
  • Sesame oil1 teaspoon
  • Rice cakes3

Contains: gluten, eggs, soy, sesame,

Method

  1. Bring water to the boil in a pan fitted with a steamer basket; meanwhile peel and finely chop the carrots, and trim the roots and tough green part of the spring onion before chopping it.
  2. Mix the carrots and spring onion with the peas and spread them in a small heatproof bowl.
  3. Lightly beat the egg whites with 3 tablespoons of water and the soy sauce, without making them foam, and pour them over the vegetables.
  4. Put the bowl in the basket, cover and steam over medium heat for 12 minutes, until the whites are set and just wobble like a custard; keep the heat moderate so they stay smooth and free of bubbles.
  5. Drizzle with the sesame oil and serve with the rice cakes.
