Ingredients

For 1 serving

  • Eggs2
  • Soy sauce1 tablespoon
  • Rice vinegar1 teaspoon
  • Ginger3 g

Contains: gluten, eggs, soy

Method

  1. Bring a small pan of water to the boil and have a bowl of iced water ready.
  2. Gently lower in the eggs with a spoon and cook at a gentle boil for 7 minutes, until the white is set and the yolk still soft.
  3. Transfer them straight to the iced water for at least 5 minutes to stop the cooking, then peel them carefully.
  4. Peel and slice the ginger; in a food bag, mix the soy sauce, rice vinegar, ginger and 3 tablespoons of water.
  5. Put the eggs in the bag, squeeze out the air so they stay submerged and marinate in the fridge for at least 2 hours, turning now and then, until the whites are evenly coloured.
