Ingredients

For 1 serving

  • Eggs1
  • Soy sauce15 ml
  • Rice vinegar5 ml
  • Edamame60 g
  • Saltto taste

Contains: gluten, eggs, soy

Method

  1. Bring a small pan of water to the boil and set a bowl of iced water beside it.
  2. Lower the egg in with a spoon and cook over medium heat for exactly 7 minutes for a jammy yolk; transfer it straight to the iced water to stop the cooking and peel it carefully.
  3. In a small container mix the soy sauce, rice vinegar and a tablespoon of water, add the egg (it should be covered: use a food bag if needed) and leave it to marinate in the fridge for at least 2 hours, turning it halfway.
  4. Before serving bring a small pan of water to the boil and cook the edamame for 4 minutes, until tender; drain and salt them.
  5. Serve the egg halved beside the warm edamame.
