Ingredients

For 1 serving

  • All-purpose flour22 g
  • Eggs15 g
  • Fresh orange juice20 ml
  • Orange zest2 g
  • Sugar9 g
  • Extra virgin olive oil4 g
  • Baking powder1 g

Contains: gluten, eggs,

Method

  1. Preheat a conventional oven to 175 °C and line a cake tin with baking paper. The quantities are for one slice: multiply them by the number of slices in the cake.
  2. Wash the orange, grate the orange zest without the white pith and squeeze it for the measured juice.
  3. In a bowl beat the eggs with the sugar using an electric whisk for 4–5 minutes, until pale, thick and foamy.
  4. Drizzle in the extra virgin olive oil, then the orange juice and zest; sift the plain flour and baking powder over the top and fold in with a spatula, lifting from the bottom.
  5. Pour into the tin and bake for 35–40 minutes, until golden and a skewer in the centre comes out dry.
  6. Let it cool in the tin before turning it out and slicing.
