Ingredients

For 1 serving

  • Rolled oats40 g
  • Soy milk200 ml
  • Silken tofu150 g
  • Soy flour10 g
  • Blueberries80 g
  • Hemp seeds10 g

Contains: gluten, soy,

In season: July – September

Method

  1. In a small pan whisk the soy flour into the cold soy drink until there are no lumps; add the oats.
  2. Bring to a gentle simmer and cook over low heat for 5 minutes, stirring often, until the porridge is thick and creamy: cooking also matters for the soy flour, which is hard to digest raw.
  3. Meanwhile drain the silken tofu and blitz it with a stick blender until smooth as cream.
  4. Turn off the heat and stir the tofu into the porridge; rinse the blueberries.
  5. Pour into a bowl and top with the blueberries and hemp seeds.
