Ingredients

For 1 serving

  • Skim milk150 ml
  • Nonfat dry milk15 g
  • Eggs1
  • Egg whites33 g
  • Espresso30 ml
  • Sugar5 g
  • Stevia3 g

Contains: lactose, eggs,

Method

  1. Turn the oven on to 160 °C (conventional) and boil a kettle of water for the bain-marie. Make the espresso and let it cool slightly.
  2. Put the sugar in a small pan over medium-low heat without stirring, just swirling the pan, for 3–4 minutes, until it becomes an amber caramel; pour it straight into the bottom of the mould.
  3. In a bowl, gently beat the egg, egg white, skimmed milk, milk powder, coffee and stevia with a fork without making it foamy, so the flan stays smooth.
  4. Pour the mixture into the mould, set it in a baking dish and fill the dish with hot water to halfway up the mould. Bake for 30 minutes, until the flan is set but still wobbles slightly in the centre.
  5. Let it cool out of the water, then chill for at least 2 hours, until cold and firm.
  6. Run a knife around the edge and turn it out onto a small plate to serve with its caramel.
