Ingredients

For 1 serving

  • Egg yolks1
  • Sugar10 g
  • Fresh orange juice30 ml
  • Strawberries100 g

Contains: eggs

In season: April – June

Method

  1. Put a small pan with a couple of centimetres of water on to simmer gently over medium-low heat; meanwhile wash the strawberries, hull and halve them and put them in a serving glass.
  2. In a heatproof bowl that sits on the pan without touching the water, whisk the yolk with the sugar for 2 minutes, until pale and creamy.
  3. Add the fresh orange juice, set the bowl over the pan and keep whisking over low heat for 6–8 minutes, until the zabaglione is foamy, puffed and leaves a trail when you lift the whisk; if the water boils hard the yolk will scramble.
  4. Pour the hot zabaglione over the strawberries straight away and serve.
