Ingredients

For 1 serving

  • All-purpose flour12 g
  • Hazelnuts10 g
  • Butter5 g
  • Sugar6 g
  • Dark chocolate 70%4 g

Contains: gluten, lactose, nuts,

Method

  1. Preheat the oven to 160 °C (conventional) and line a baking tray with baking paper. Take the butter out of the fridge to soften.
  2. Pulse the hazelnuts with the sugar in a food processor until they turn into a sandy flour, without letting them become a paste.
  3. In a bowl, combine the hazelnut flour with the plain flour and soft butter, working with your fingertips until the dough holds together; roll four equal balls and flatten the bases slightly.
  4. Bake for 15 minutes, until just golden at the base, then let them cool completely on the tray: they break while hot.
  5. Melt the dark chocolate over a pan of barely simmering water on a low heat for 1–2 minutes, until smooth; spread a thin layer on the flat base of one ball and join it to another. Let it set for a few minutes before serving.
