  • Eggs1
  • Skim milk60 ml
  • All-purpose flour10 g
  • Sugar8 g
  • Cherries100 g

Contains: gluten, lactose, eggs,

In season: May – July

Method

  1. Heat the oven to 180 °C (conventional); wash the cherries, remove the stalks and stone them with a cherry pitter or the tip of a small knife.
  2. In a bowl whisk the egg with the sugar for 1 minute, until frothy.
  3. Add the sifted flour and stir, then pour in the skimmed milk in a thin stream, whisking until the batter is smooth and runny, with no lumps.
  4. Arrange the cherries in a ramekin and pour the batter over them.
  5. Bake for 25 minutes, until the clafoutis is puffed, golden at the edges and set in the centre; let it cool for 5 minutes before serving: it sinks a little, which is normal.
