Ingredients

For 1 serving

  • Soy milk180 ml
  • Agar agar1 g
  • Brown sugar10 g
  • Cinnamon1 pinch
  • Pear1

In season: August – December

Method

  1. In a small pan, whisk the soya drink with the agar agar, brown sugar and cinnamon while cold, until the agar is well dispersed.
  2. Bring to the boil over medium heat and simmer for 2 minutes, stirring constantly: agar only sets once it has boiled.
  3. Pour into a wet mould and, once lukewarm, leave to set in the fridge for an hour, until firm.
  4. Meanwhile, wash, peel and core the pear and cut it into wedges about 1 cm thick.
  5. Cook it in a pan with a splash of water over medium heat, covered, for 8 minutes, until tender but still whole; leave to cool slightly.
  6. Run a knife around the edge of the mould, turn out the panna cotta and serve it with the warm pear.
