Ingredients
For 1 serving
- Banana1
- Eggs1
- Rolled oats40 g
- Baking powder3 g
- Sunflower oil1 teaspoon
- Blueberries80 g
- Maple syrup1 teaspoon
Contains: gluten, eggs
In season: June – September
Method
- Peel the banana, break it up and put it in the blender with the egg, the oats and the baking powder; blend for about a minute, until the batter is thick with no lumps of banana.
- Let the batter rest for 2–3 minutes while you rinse the blueberries and dry them on kitchen paper.
- Heat a non-stick pan over medium-low heat and grease it lightly with the oil, wiping it on with kitchen paper.
- Drop the batter in by the spoonful, making rounds about 8 cm across, and cook for 2 minutes, until bubbles appear on top and the edges are set; flip with a spatula and cook 1–2 minutes more, until golden. Keep the heat low: with banana they burn easily.
- Serve the pancakes hot with the blueberries and a drizzle of maple syrup.
