  • Breadcrumbs15 g
  • Anchovies in oil2
  • Mixed salad greens80 g
  • Extra virgin olive oil2 teaspoons

Method

  1. Preheat a fan oven to 210 °C and line a baking tray with baking paper. Slice the mozzarella and let it drain on kitchen paper, because if it is wet the bread goes soggy.
  2. Fill the slices of sandwich bread with the mozzarella and the drained anchovies, close them into sandwiches pressing the edges well and cut into triangles.
  3. In a shallow dish beat the eggs with the milk and a pinch of salt; put the breadcrumbs in another dish. Dip the triangles in the egg, wetting the edges well too, then in the breadcrumbs.
  4. Arrange them on the tray, drizzle with half the oil and bake for 12 minutes, turning halfway, until golden and crisp and the mozzarella starts to string.
  5. Meanwhile wash and dry the mixed salad and dress it with the remaining oil and a pinch of salt; serve it with the hot triangles.
