Ingredients

For 1 serving

  • Apple2
  • Cinnamon1 teaspoon
  • Lemon juice1 teaspoon

In season: September – March

Method

  1. Heat a fan oven to 100 °C and line two baking trays with baking paper.
  2. Meanwhile wash and dry the apples and slice them wafer-thin, about 2 mm, on a mandoline, keeping your fingers away from the blade with the hand guard; remove the pips.
  3. Brush the slices straight away with the lemon juice so they don't brown and pat them dry with kitchen paper.
  4. Lay them on the trays in a single layer without overlapping and dust with cinnamon.
  5. Bake for about 90 minutes, turning them halfway, until dry and curling at the edges; they crisp up as they cool on the tray.
