- Maple syrup1 teaspoon
- Cinnamonto taste
- Soy yogurt100 g

Method
- Heat the oven to 190 °C (conventional). Rinse the quinoa well in a fine sieve until the water no longer foams.
- Put it in a small pan with twice its volume of water, bring to the boil, turn to the lowest heat, cover and cook for 15 minutes, until the water is absorbed.
- Meanwhile wash the apple, slice off the top and remove the core with a small knife or melon baller, leaving a base about 1 cm thick and widening the cavity a little; roughly chop the walnuts.
- Mix the quinoa with the walnuts, raisins, a pinch of cinnamon and the maple syrup and fill the apple, pressing well; place it in a small baking dish with a finger of water in the bottom.
- Bake for 20 minutes, until the apple is soft when pierced with a toothpick and the skin starts to wrinkle.
- Let it cool for a few minutes and serve with the soy yoghurt.
