  • Cooked chickpeas90 g
  • Extra virgin olive oil3 g
  • Dried thymeto taste
  • Sumac1 pinch
  • Sesame seeds3 g
  • Lemon zestto taste
  • Saltto taste

Contains: sesame,

Method

  1. Heat a conventional oven to 200 °C and line a baking tray with baking paper.
  2. Meanwhile drain the chickpeas, rinse them and dry them carefully in a tea towel, discarding any loose skins.
  3. Toss them in a bowl with the oil and salt, spread them on the tray in a single layer and bake for 25 minutes, shaking the tray halfway, until golden and dry.
  4. While they bake, mix the sesame seeds, dried thyme and sumac in a small bowl: this is your za'atar blend.
  5. Sprinkle the blend over the chickpeas, stir them on the tray and return them to the oven for 5 more minutes, until the sesame is golden and fragrant.
  6. Take them out, grate the lemon zest over them, yellow part only, and let them cool on the tray: they turn crunchy as they cool.
