Ingredients

For 1 serving

  • Spelt flour45 g
  • Soy milk80 ml
  • Baking powder3 g
  • Apple120 g
  • Cinnamonto taste
  • Walnuts8 g

Contains: gluten, nuts, soy,

Method

  1. Wash the apple and core it; grate half with the skin on and cut the other half into thin slices.
  2. In a bowl mix the spelt flour, baking powder and a pinch of cinnamon; add the grated apple and pour in the soya drink in a thin stream, stirring until the batter is thick and lump-free.
  3. Heat a non-stick pan over medium-low heat for a couple of minutes; drop in a spoonful of batter per pancake and spread slightly with the back of the spoon.
  4. Cook for about 2 minutes, until the edges look dry and the base releases easily, then flip and cook for another 2 minutes, until golden; without eggs they're more fragile, so flip them with a wide spatula.
  5. Serve the pancakes with the apple slices and the walnuts broken into pieces.
