- Extra virgin olive oil2 tablespoons

Method
- Bring two pans of water to the boil over high heat, one for the rice and one for the broccoli; meanwhile rinse the basmati rice in a sieve until the water runs almost clear.
- When the water boils, salt it, add the rice and cook for 10–12 minutes over medium heat, until tender; drain.
- Meanwhile, cut the broccoli into small florets and wash them; drop them into the other pan of salted water and blanch for 4 minutes, until bright green and just tender, then drain.
- Pat the tofu well with kitchen paper to remove the water and cut it into roughly 2 cm cubes; peel and thinly slice the garlic.
- Heat the oil in a large non-stick pan over medium-high heat, add the tofu and fry for 5–6 minutes, turning only occasionally, until golden and crisp on several sides.
- Add the garlic and broccoli, season with salt and stir-fry for 5 minutes over high heat, until the garlic is fragrant and the broccoli has a few golden spots.
- Serve the tofu and broccoli alongside the rice.
