- All-purpose flour25 g
- Eggs10 g
- Sugar6 g
- Extra virgin olive oil5 g
- Baking powder1 g
- Orange zestto taste
- Orange marmalade20 g
- Nonfat Greek yogurt100 g
Contains: gluten, lactose, eggs,
In season: December – March
Method
- Preheat the oven to 180 °C (conventional). The quantities are for one slice: for a whole 8-portion tart (about 24 cm tin) multiply them by 8, except the yogurt. Line the tin with baking paper.
- Wash the orange under hot water, dry it and grate the orange zest, only the coloured part.
- In a bowl beat the eggs with the sugar and extra virgin olive oil, add the zest, flour and baking powder and knead by hand just until the pastry is smooth and holds together.
- Set aside about a quarter of the dough. Press the rest straight into the tin with your fingers to about half a centimetre thick, building up a rim, and prick the base; spread the orange marmalade over it.
- Cut the remaining pastry into strips about 1 cm wide, lay them in a lattice and bake for about 30 minutes, until the pastry is golden at the edges.
- Let it cool in the tin, as it breaks while hot, and serve a slice with the Greek yogurt.
