Ingredients

For 1 serving

  • All-purpose flour30 g
  • Soy milk30 ml
  • Brown sugar10 g
  • Sunflower oil5 g
  • Baking powder2 g
  • Apple80 g
  • Cinnamonto taste
  • Almond milk200 ml

Contains: gluten, nuts, soy,

In season: September – March

Method

  1. Preheat the oven to 180 °C (conventional). The quantities are for one slice: for a whole 8-portion cake (about 24 cm tin) multiply them by 8, except the almond drink. Line the tin with wetted and wrung-out baking paper.
  2. Wash the apple, core it and cut it into roughly 1 cm dice, leaving the skin on.
  3. In a bowl mix the flour sifted with the baking powder, the brown sugar and a generous pinch of cinnamon.
  4. Add the soya drink and sunflower oil and whisk until the batter is smooth and lump-free, then fold in the apple.
  5. Pour into the tin, level it and bake for about 40 minutes, until the top is golden and a skewer pushed into the centre comes out dry.
  6. Let it cool in the tin, as without eggs it's fragile while hot, and serve a slice with the almond drink.
