Ingredients

For 1 serving

  • Corn flour15 g
  • Rice flour8 g
  • Dried figs2
  • Eggs15 g
  • Reduced-fat milk20 ml
  • Honey7 g
  • Sunflower oil3 g
  • Baking powder1 g

Contains: lactose, eggs,

Method

  1. Preheat a conventional oven to 175 °C and line a loaf tin with baking paper. The quantities are for one slice: multiply them by the number of slices in the loaf.
  2. Trim the hard stems off the dried figs and cut them into pieces of about half a centimetre.
  3. In a bowl whisk the eggs with the honey, then add the milk and sunflower oil.
  4. Add the cornmeal, rice flour and baking powder and mix until smooth, then stir in the figs.
  5. Pour into the tin, level and bake for 40 minutes, until deep golden and a skewer in the centre comes out dry.
  6. Let it cool in the tin before slicing: being gluten-free it is fragile while hot.
