Ingredients

For 1 serving

  • Almond flour25 g
  • Powdered sugar10 g
  • Egg whites10 g
  • Lemon zest1 g

Contains: nuts, eggs

Method

  1. Preheat the oven to 170 °C (conventional) and line a baking tray with baking paper.
  2. In a bowl, mix the almond flour, icing sugar and finely grated lemon zest.
  3. Add the egg white and knead by hand for a couple of minutes, until you have a firm, mouldable dough; if it sticks, slightly dampen your hands.
  4. Divide it in two, roll two balls, flatten them slightly with your fingers and place them well apart on the tray.
  5. Bake for 12–15 minutes, until just golden on top but still soft inside.
  6. Let them cool on the tray before lifting them off: they firm up as they cool.
