- Eggs2
- Rice flour15 g
- Avocado40 g
- Extra virgin olive oil1 teaspoon
- Paprika1 pinch
- Saltto taste
- Black pepperto taste
Contains: eggs,
In season: October – March
Method
- Switch on the waffle iron so it heats up properly.
- Peel the sweet potato and grate it on the coarse side of the grater; squeeze it in your hands or in a tea towel to remove excess water, so the waffle turns crisp.
- In a bowl, mix the sweet potato with one egg, the rice flour and a pinch of salt until the mixture holds together.
- Grease the hot iron with a few drops of oil, spread the mixture in an even layer, close and cook for 7–8 minutes, until the waffle is golden, crisp and comes away easily.
- Meanwhile, heat the remaining oil in a small frying pan over a medium heat, crack in the second egg and fry for 3–4 minutes, until the white is set and the yolk still runny; season lightly with salt.
- Slice the avocado thinly; serve the waffle topped with the egg and avocado, a sprinkle of paprika and a grind of black pepper.
