For 1 serving
- White rice40 g
- Reduced-fat milk280 ml
- Apple1
- Lemon zest2 g
- Brown sugar1 teaspoon

In season: September – March
Method
- In a heavy-based small pan bring the milk to the boil over medium heat with the lemon zest and brown sugar.
- Add the rice, turn the heat to its lowest and cook for 30 minutes, stirring often, especially towards the end, until the grains are very soft and the rice is creamy: low heat stops the milk catching on the bottom.
- Meanwhile, wash and core the apple and slice it thinly.
- Cook the apple in a small pan with a splash of water over medium-low heat for 5 minutes, covered, until soft but still whole.
- Remove the lemon zest and let the rice cool for a few minutes.
- Serve the rice in a bowl with the warm apple and a dusting of cinnamon.
