Ingredients
For 1 serving
- Millet50 g
- Rice milk200 ml
- Apricots3
- Sunflower seeds12 g
- Cardamom1 pinch
- Agave syrup1 teaspoon
In season: June – July
Method
- Put the millet in a fine sieve and rinse it well under running water, rubbing it with your fingers, until the water runs clear: this removes its slightly bitter aftertaste.
- Put it in a small pan with the rice drink, a splash of water and the cardamom, bring to the boil over a medium heat, then lower to a low heat, cover and cook for 20 minutes, stirring now and then, until the millet is tender and creamy.
- Meanwhile wash the apricots, halve them, remove the stones and cut them into wedges.
- Spoon the millet into a bowl, arrange the apricots on top and finish with the sunflower seeds and a drizzle of agave syrup.
