Ingredients
For 1 serving
- Prickly pears2
- Sugar8 g
- Lemon juice10 ml
In season: August – October
Method
- Peel the prickly pears wearing gloves or using a fork and knife, because of the fine spines: cut off the ends, slit the skin lengthways and peel it away.
- Blend the flesh with the sugar and lemon juice until smooth, then push it through a fine sieve with a spoon to remove the seeds.
- Pour the mixture into a shallow metal tin, which freezes faster, and put it in the freezer.
- Every 30 minutes, for about 3 hours, scrape the surface and edges with a fork, until the whole mixture has turned into grainy ice crystals; serve straight away.
