  • Basil pesto15 g
  • Green beans120 g
  • Potatoes150 g
  • Extra virgin olive oil1 teaspoon
  • Saltto taste

Contains: gluten, lactose, nuts, soy,

In season: June – September

Method

  1. Put a pan of water over high heat and bring it to the boil. Meanwhile peel the potatoes and cut them into roughly 2 cm cubes; top and tail the green beans and cut them in half.
  2. When the water boils, salt it, add the potatoes and after 3 minutes add the green beans. Cook everything together for another 9–10 minutes over medium heat, until the potatoes are easily pierced with a fork and the beans are tender.
  3. Meanwhile cut the seitan into roughly 1.5 cm cubes and brown it in a frying pan with the extra virgin olive oil over medium-high heat for 4 minutes, until golden on all sides.
  4. Before draining the vegetables, set aside a small ladle of the cooking water. Drain the potatoes and beans and tip them into the seitan pan, off the heat.
  5. Add the Genovese pesto and a spoonful of the cooking water and stir gently until everything is coated in a creamy sauce. Serve straight away.
