For 1 serving

  • Shrimp270 g
  • Extra virgin olive oil2 teaspoons
  • Garlic2 cloves
  • Chili pepperto taste
  • Parsley7 g
  • Saltto taste

Contains: shellfish,

Method

  1. Peel the prawns, score along the back with a small knife and remove the dark vein; rinse and dry them well with kitchen paper, so they sear rather than stew.
  2. Peel and thinly slice the garlic; wash, dry and chop the parsley.
  3. Heat the extra virgin olive oil in a wide pan over a medium heat with the garlic and chilli for 1 minute, until the garlic sizzles and is just golden.
  4. Turn the heat up high, add the prawns in a single layer and sauté for 2–3 minutes, turning, until pink and opaque; don't cook them longer or they turn rubbery.
  5. Turn off the heat, season with salt, finish with the parsley and serve straight away.
