  • Tomatoes1
  • Garlic1 clove
  • Cumin0.5 teaspoon
  • Lemon juice1 tablespoon
  • Extra virgin olive oil2 teaspoons
  • Parsleyto taste

Method

  1. The evening before, rinse the dried fava beans and soak them in plenty of cold water; then boil them ahead of time in fresh water over low heat for about 60 minutes, until they crush easily between your fingers (or use ready-cooked beans), keeping some of their cooking water.
  2. Wash the tomato, remove the stalk and dice it; chop the parsley; peel and crush the garlic.
  3. Put the beans in a small pan with a small ladle of their water, the garlic and the cumin and heat over medium heat for 5 minutes, mashing about half of them with a fork, until thick and partly creamy.
  4. Turn off the heat and dress with the lemon juice, oil and salt.
  5. Serve in a bowl topped with the diced tomato and chopped parsley.
