- Zucchini120 g
- Cherry tomatoes120 g
- Extra virgin olive oil2 teaspoons
- Dried oreganoto taste
- Saltto taste
In season: June – September
Method
- Put a griddle or cast-iron pan over a medium-high heat; if using wooden skewers, soak them in water meanwhile so they don't burn.
- Cut the chicken breast into roughly 2.5 cm cubes; wash and trim the courgette and cut it into 1.5 cm thick rounds or cubes of the same size; wash the cherry tomatoes.
- Thread the chicken, courgette and tomatoes alternately onto two skewers, without packing them too tightly.
- Season the skewers with the extra virgin olive oil, a pinch of dried oregano and salt, turning them to coat on all sides.
- Cook on the hot griddle for 8–10 minutes, turning often, until the chicken is golden outside and white inside and the courgette is charred and tender.
