Ingredients

For 1 serving

  • Avocado100 g
  • Eggs2
  • Salsa50 g
  • Cilantro3 g
  • Cayenne pepper1 pinch
  • Corn tortillas1
  • Saltto taste

Contains: eggs,

Method

  1. Turn the oven on to 200 °C (conventional).
  2. Halve the avocado, remove the stone and widen the hollow a little with a teaspoon, so the egg fits without spilling; slice a thin piece off the bottom of each half so it sits flat.
  3. Set the halves in a small ovenproof dish, crack an egg into each hollow (if the eggs are large, add just the yolk and part of the white) and season lightly with salt.
  4. Bake for 14 minutes, until the white is set and the yolk still soft.
  5. In the last few minutes, warm the tortilla in a dry frying pan for 30 seconds per side, until soft.
  6. Serve the avocado eggs with the salsa, torn fresh coriander, a pinch of chilli powder and the warm tortilla.
