Ingredients

For 1 serving

  • Medjool dates1
  • Whole wheat flour22 g
  • Soy milk30 ml
  • Walnuts5 g
  • Sunflower oil3 g
  • Baking soda0.5 g
  • Cinnamonto taste

Contains: gluten, nuts, soy,

Method

  1. Stone the dates; heat the soya drink in a small pan over low heat for 1–2 minutes, until hot but not boiling, and soak the dates in it for 10 minutes.
  2. Meanwhile preheat a conventional oven to 175 °C and line a loaf tin with baking paper. The quantities are for one slice: multiply them by the number of slices in the loaf. Roughly chop the walnuts.
  3. Blend the dates with the soya drink until you have a smooth cream.
  4. In a bowl mix the date cream with the sunflower oil, then add the wholemeal flour, bicarbonate of soda and cinnamon and fold until no dry flour is visible; stir in the walnuts.
  5. Pour into the tin, level and bake for 45 minutes, until dark on top and a skewer in the centre comes out dry.
  6. Let it cool in the tin before slicing.
