Method
- Preheat a conventional oven to 175 °C and line a loaf tin with baking paper. The quantities are for one slice: multiply them by the number of slices in the loaf.
- Wash the apple, quarter it, remove the core and cut it into small cubes of about 1 cm.
- In a bowl whisk the eggs with the brown sugar until foamy, then add the yoghurt and sunflower oil.
- Add the spelt flour, baking powder and cinnamon and fold with a spatula until no dry flour is visible; stir in the apple.
- Pour into the tin, level and bake for 45–50 minutes, until golden and a skewer in the centre comes out dry (avoid poking a piece of apple, which stays moist).
- Let it cool in the tin for 10 minutes, then on a wire rack, and slice it when lukewarm.
